Apple Carrot Salad
Ingredients

1 cup shredded carrots

3 medium apples, washed, cored and diced with skins on

1 tbsp. lemon juice

½ cup raisins

⅛ cup low-fat mayonnaise
Directions
Combine all ingredients. Chill thoroughly. Serve on salad greens.
Serves about 6
